Creamy Chicken Noodles

Monday's are usually chaotic. Like most people, we don't like having to go back to school or work and things get busy with sports and extra activities. So quick and easy dinners are my absolute favorite. Now that the weather is cooling down, I wanted something warm and comforting. Today I made a one pan creamy chicken and noodle with veggies. You'll notice that today I used frozen foods, it's okay! Sometimes I just don't have the time or energy to cut and prep things myself. My motto: my kids are fed, happy, and healthy. 

Ingredients: 

1/2 bag of Frozen grilled chicken strips

1/2 bag frozen veggies (I used carrots and peas) 

1 box organic chicken broth

2 cans of cream of chicken 

1 bag of no yolk broad noodles 

1 - 2 tablespoons of garlic powder 

3 tablespoons of Italian seasoning 

 

Directions: 

bring a pot of water to boil, about 4-6 cups. Once boiling, add noodles until aldente (cooked but slightly not all the way). Drain noodles. Add noodles back to pot and then add 1 can of cream of chicken, using the chicken broth fill the can and pour into the soup. This will help get any remainder left in the can. Repeat with 2nd can. Add the remainder of the chicken broth to the noodles. Add the frozen veggies, then the chicken  give it a good mix and cover with lid. Keep on low heat for about 10 min or until chicken is hot and broth is boiling. Serve with lemon. Pairs well with grilled cheese.
